Pinto Beans Recipe

I made a pot of Pinto Beans the other day, and folks that ate them just went crazy on how good they were. Many wanted the recipe, so here it is! I hope you try it and share it with friends.

Ingredients:

* 2 lbs dried pinto beans
* Ham bone and chunks of ham
* 3 - 32oz cartons of Chicken Broth
* 1 - white onion, diced
* 1 lb baby carrots cut in half (not lengthwise, the other way half)
* 4 – Jalapenos, finely diced (seeds and all)
* 2 -Tbsp Special Shit


Preparation:

A lot of folks like to soak their beans for hours or overnight; I'm not among them. Take the beans and put them in a sizable pot. They are going to swell, so err on the side of too big rather too small; an 8qt pot is about right. Pour in all the chicken broth and if any beans float, take them out and trash them. Add the onion, jalapenos, Special Shit, and ham, and bring to a boil. Reduce heat to a simmer and keep a close watch on them for the next hour. Make sure there is enough liquid in the pot to keep them from being crowded. If necessary, add more chicken broth or water.

Cook until the ham literally falls off the bone. I put in extra ham in the form of bite size pieces into the mix because we like ham as well as the beans. Once the ham starts falling off the bone fish out the bone and any gristle you find. Add the carrots and cook for another 30 minutes.

The beans are much better the next day so let them just chill out on the stove with the heat off until you are ready to serve.

Serve with BBQ, hamburgers, or just enjoy them with a piece of cornbread.
