Onion Rings with a Kick

Perfect as a side dish to burgers or even as a snack, onion rings are simple, classic, and delicious. Ours have just a little kick of spice to make them even more special.

Ingredients

* 1 to 2 qt canola oil
* 1 1/2 cup flour
* 1 1/2 cup finely ground cornmeal
* 1/2 cup cornstarch
* 1/2 tsp AwShit
* SpecialShit
* 1 egg
* 1 cup buttermilk
* 2 large sweet onions, sliced 1/4 in. thick and separated into rings

Preparation

1. In a large pot, add the oil until it is at least 3 inches deep and heat to 360°.
2. In a large, wide bowl, whisk together the flour, cornmeal, cornstarch, and AwShit. In another bowl, beat the egg and buttermilk together.
3. Lightly toss a few rings in the flour mixture, and then dip into the egg mixture. Allow most of the egg mixture to drip off, and then toss again in the flour mixture. Shake off excess flour.
4. Place the rings into the oil, frying for 2 to 3 minutes or until they are golden brown. Make sure to move the rings around while cooking to keep them separated.
5. Remove the onion rings to a plate lined with paper towels. Lightly sprinkle with SpecialShit.
6. Repeat steps 3 through 5 until all the onion rings are done, placing a layer of paper towels in between each batch so that they don't get soggy.
