Spicy Chicken Tinga Tacos

Tacos really are one of life's treasures. If you're looking to try your hand at making some authentic spicy chicken tacos, then try this recipe out! Customize the heat by addition or omission of some of the chipotle peppers. Yum!

Ingredients:

* 1 Tbsp olive oil
* 1 cup chopped sweet onion
* 2 cloves minced garlic
* 1-2 chipotle peppers in adobo sauce, chopped
* 1 tsp AwShit
* 1 tsp dried oregano
* 1/2 tsp ground cumin
* 3/4 cup canned crushed fire-roasted tomatoes
* 1/4 cup chicken stock
* 3 cups shredded cooked chicken
* 10 corn tortillas
* 2 ripe avocados, sliced
* 1/4 cup chopped fresh cilantro
* 1/2 cup diced red onion
* crumbled cotija cheese
* 1 lime, sliced into wedges

Preparation:

1. Heat a large skillet over medium heat. Then, add the oil and onion and saute for about 4 minutes or until tender. Add the garlic and cook for 30 seconds more. Add the chipotles and seasonings and cook for another minute. Then add in the tomatoes (do not drain the cans first) and chicken stock. Bring to a boil then reduce and simmer for 7 minutes.
2. Transfer the tomato mixure to a blender and blend until smooth.
3. Return the blended sauce to the skillet and add the chicken. Cook for 5 minutes.
To serve: heat up the corn tortillas and then fill with chicken mixture. Top with avocado slices, cilantro, red onion, and cotija. Serve with a lime wedge.
